This week, The Weekly Beet reports on some of the healthiest vegetables that come from the ocean. Mary Kent pulls seaweed straight from the sea, revealing the powerful healing benefits these salty greens have on the body.
Wrapped around your favorite sushi roll or substituted for that unhealthy iceberg lettuce, seaweed could easily be one of the healthiest greens on your plate! Now being called sea vegetables, these greens are creating quite a stir in the health food industry! With American varieties such as Dulse, Kelp, Alaria, Laver, Bladderwrack, and Sea Lettuce and Asian varieties such as Nori, Hijiki, Kombu, Arame, and Wakame, the sea vegetable aquaculture is a fast growing $6 billion endeavor. Harvested for thousands of years in Japan, Korea, and China, it seems that Americans are more recently riding the wave on the incredible healing powers of seaweed. Seaweed became a hit in the American dietary world with the introduction of Macrobiotics by Michio Kushi, the Macro diet's guru. In this diet, seaweed is a major component to the cooking of vegetables, brown rice, pulses, and fermented soy products. The diet incorporates whole foods, leaving out highly processed food that takes the dieter away from health, happiness, and well-being.
Packed with vitamins, minerals, and protein, sea vegetables truly are a perfect food. The beauty of sea vegetables is that they contain 10 to 20 times the amount of minerals and vitamins found in any land vegetable. To be exact they contact all 56 minerals and are even made up of about 48% protein, which is astronomical for any vegetable.
From healing anemia to fighting certain cancers, the healing benefits of sea vegetables are endless! Here's why we're green with envy over the powers of
seaweed:
- Supplies the body with important minerals such as calcium, sodium, magnesium, potassium, iodine, iron, and zinc.
 - Contains essentials vitamins such as vitamin A, B1, B2, B6, niacin, vitamin C, pantothenic acid, folic acid, and trace amounts of vitamin B12.
- Detoxes the body.
- Enriches the blood.
- Nourishes the hair and scalp.
- Regulates hormones and eases menopausal symptoms.
- Supports healthy thyroid function.
- Promotes healthy skin as it contains plenty of Vitamin E.
- Fights certain cancers as it is rich in lignans.
- Eliminates anemia.
- Protects the heart from cardiovascular disease.
Cooking with seaweed is a cinch! Our favorite brands of sea vegetables are Maine Coast Sea Vegetables and Emerald Cove. You can get them at your local health food store. An easy sea vegetable trick is to put a strip of seaweed in any rice or bean dish to substitute the use of salt. Also, many canned beans found in health food stores such as Eden use seaweed to naturally flavor their products! Now, that's what we call unBEETable!
Eat your sea greens! Don't miss a Beet. Stay tuned for next week.
Love,
Mary Kent
